Flatbread pizza with guacamole, pesto, mozzarella and rocket
serves 4, prep 20mins.
INGREDIENTS:
- 4 large flatbreads (e.g. naans or pittas) 
- 8 tbsp guacamole pesto 
- 4 balls mozzarella 
- 2 handfuls fresh rocket 
- Salt & pepper to taste 
- Red chilli flakes 
METHOD:
- In a dry pan, heat the flatbreads. 
- Brush the breads with guacamole pesto 
- Tear the mozzarella and arrange over the pizzas. 
- Season with salt, pepper and red chilli flakes as desired. 
- Sprinkle a handful of fresh rocket over each pizza.
